1. Why do I have to re-login every 7 days? Every other forum that I participate in has the login cookie set to months. Kind of an annoyance, that's all.
2. Why can I see everyone's IP address below their name? Shouldn't only the admins be able to see that info? Kind of creepy that everyone can see my IP address or I can see theirs.

Not sure on the log in thing, I have to also. I personally like it for board related stuff as it let's us know the last time a member logged in, which is a benefit for some issues.
On your second question you shouldn't have been able to. The option should now be turned off.

I seem to always be logged unless I go to a different device.
I also see everyone's IP address.
