My questions are:
What is the ESI phone systems operating system based on if anything?
Is there a way to view the files on the hard drive or flash card (I dont think you can just browse them in windows)?
Is there any known way to give the system some kind of redundancy (raid etc.) so that when the drive or card fails (which was a big problem recreantly) the whole system doesn’t go dark?

Thanks in advance for any and all help anyone here can provide.

First, Welcome to the board.

Second, one of the ESI moderators (which I am not)will respond to your questions, but it would be best if you completed your profile. We like to know who we give this kind of information to and often it's necessary to do it by private email, yours is not listed.

The HD is the biggest single point of failure in an ESI switch and even worse to change it out you need to take the switch down, dismount it and remove all the cards to swop out the HD, not the most brilliant design decision obviously perpertrated by people who haven't been in the field long enough if ever.
Provisioning for a raid drive or a complete backup for restore would be a very nice feature currently missing from the offerings.
