Client has a bar on the ocean. I have to replace the (badly corroded) network jacks about every six months or so.
Has anyone used dielectric grease on network connections?

How about these. I use the corroshield phone jacks in corrosive environments and have good luck with them.

Those look cool, but I'd like something to protect the patch cords, too. I think if I slap some goo in there, it should help with both parts of the connection.

I had a couple of key phones in a greenhouse. Jacks and cord plugs were a problem. We plugged the line cords in and put regular silicone caulk around it and the jack. It didn't last forever, but did help a great deal more than before we did the silicone.

We used to use silicone grease to weatherproof outdoor CATV "F" connectors. A boot was slid on the cable before the hex crimp connector was installed. You would fill the boot from a tube of grease then slide the boot over the connector. We now use compression connectors that are inherently weatherproof so boots and grease are no longer needed.
I went through all the CATV suppliers I have listed and couldn't find any. You want silicone dielectric grease NOT silicone lubricating grease. Give Google a shot.

In our shop, I have used the Caig DeOxit D5 products for many years. The small spray cans are somewhat expensive but they always did a good job for me. Here is the Caig website https://www.caig.com/ They have all sorts of products. The Shield S series looks to be interesting. I've never used those...but knowing what some of the other products can do---I'd think that those products would do what they say they'd do.
