My questions is how would I setup a caller reaching the main greeting to press a key and ring an offsite telephone number? This could be a cell phone number?

You would need to direct the Auto Attendant option to ring and internal ext, and set that station to call forward to the external number.

mailbox with speed dial out to cell number,, like press 3 to tranfer to outside number
