My experience with this requirement is usually in new construction projects where the GC provides plywood wall lining in tel/data closets. They aren't about to let some third party come in and install something that will screw up their inspections. I'm guessing that contractors doing major commercial construction have sources for this material through their normal channels.
You're not going to find 12 gauge metal studs or purple sheet rock at big box stores either. I guess that when it comes to real commercial construction, these companies have their resources.
With that said, I've never had to even shop for it.
