Is there a way to export the dialing directory out of VMMI?

I'm not at my office computer but if I remember correctly if you do a search for a file with a (.DIR) extension within the the Comdial directories that you have the VMMI installed it will contain everything in it. Copy and paste and you should have it.

should be in the program file of your VMMI folder. commdir.dat
