Is it possible to remotly upgrade the software on the ITP phones? eg setup a server with TFTP software & tell phones via 840 to look for updated software

I beleive the answer is yes. You can have the phones do it via how you described or manually do it from the phones themselves. When you have that setting set in 840 the phones will look at the different software and see that it's missmatched then will do the upgrade. I don't like anything to be auto personally. I rather be involved to make sure everything goes right and to do testing after it's done. I have done the upgrades on ITP phones using a TFTP server I created but I did it manually from the phones. Never done it the other way. Maybe Samsung could be of some help here for you.
