Why do some manufacturers twist their pairs in their cat3 cable? It doesn't make sense to me. I can't stand it, having to untwist each pair to terminate it. Is there a reason for it?

The twist help the wire from picking up outside interference. If you notice the twist per inch for each pair is different to help prevent crosstalk.

I have never worked with cable that did not have a twist....even Cat 0 IW. :shrug: Even OSP lead cable had twist. Open wire "rolled" between cross arms to "twist" .  Yes, I have placed IW on the ground to replace damaged buried cable and had it cross talk, even with the twist.

Interesting, these twists are as tight as cat5 cable, if it said cat5e on the shielding I wouldn't think twice.

Perhaps you have Cat5e and the manufacturer made a mistake. I, too, have gotten several boxes that I would swear was Cat5e but it was labelled Cat 3.

I've come across some deep discount cable suppliers that sell all different types of cable, when in reality it is all the same stuff. It's all CAT5 PVC, but they change the markings so that it becomes whatever you want it to be.

I know an engineer at Champlain Cable who told me that what they box as cat. 3 cable is the run that doesn't pass the cat 5/5e test. He said that is fairly common.

That's exactly right, I have received some of that junk myself.
I can't stand it, having to untwist each pair to terminate it.

Some of the old Nordx Cat 3 cable was twisted just as much as Cat 5 cable. It was a pain to work with.

And when we called about they said it was cat 5 that wouldn't pass the manufactures test so they sold it as cat 3. I told them not to do that to me from now on. If I order cat 3, I want cat 3 not bad cat 5.
