Just curious, how do you get to those?
I had to re-configure a customer's Mac so that it used DHCP rather than PPOE (had to do with a DSL connection), but I can't remember how I got to those settings...
Any help would be appreciated....

Mac OS X or older?
In X, go to Apple Menu>System Prefs. Click on teh NETWORK icon. Find which one you want to configure (ethernet or airport), click configure, go through the settings there to adjust DHCP.
