Will the EP300 SIP phones work on a regular mp5000 without any sip hardware? The reason I ask is because I have a customer that inherited a ConverSIP MP5000 with EP 300 endpoints. He only wants to use about 6 regular POTS lines. My guess is that he can't use those sets since there ip....I just wanted to make certain.

If you have the SIP server license and NO IP board flashed for SIP support then they will only talk internally. The IP board flashed for SIP support allows connectivity to PSTN lines.
