There would be endless options available for an install like this.
You could use a hybrid analog/IP DVR as the head end and use an analog to IP converter in the store to save on paying for IP cams (unless you can get a decent deal on them).
Ideally, a POE switch in each building with IP cams and a decent DVR would be a good choice but the price would be a fair bit higher than analog.
We use mostly Honeywell video products but they are in a higher price range than say Geovision or N-Patrol.
One of the latest products from Honeywell is their off sight video server service called Maxpro Cloud.
