What headsets work well with a nortel m7310. Can the headset be used without lifting the handset, If so, How do you set it up?

Take your pick on the brand. I use Nortel, Norelco, and plantronics.
Plug the headset into the headset jack under the phone. You use the handsfree button to activate it. Or pick up the handset, your choice.

I have seen in multiple posts that the M7310 has a headset jack for a direct connection, but can they support amplifiers as well?

Yes, but why would you need it, unless the user is really hard of hearing?
