can anyone tell me why there is a significant price difference between those two models?

Depending on the system and system software being used the T7316 will only act as a M7310.

T7316 have any assigned line buttons in a fixed location, whereas with the T7316e, they can be moved up or down for example.

As well, the Hands Free function is a little different on the two models.

The T7316e is a newer version. There are other slight differences, but most people can still be happy with the T7316.

To add the T7316e has more symbols on the lower display when used with 6.1 software or up.

The T7316 only works as a M7310 - does not matter the software.
The two rows of 8 buttons next to the arrow display really act like 5+3 on each side. The 5 lower ones work just like the five on the M7310 and the top 3 work like the 12 top buttons on the M7310.
And YES you can move line buttons around just like on the M7310's as long as they are on the 5 lower buttons for each side. (not intercom).
And the handsfree is always the bottom right button.

The T7316e still works as the M7310 if the software is lower than 6.1 and even though it has a Handsfree button below the dial pad, it still shows up on the bottom right.
But when you put the T7316e phone on a 6.1 or higher software, then all 16 buttons work together AND the handsfree button is now below the dial pad.

That is why the cost is higher. You now have 16 buttons instead of 10 for lines, Intercom, AnsDN, Hunt Grp, etc...
