I need to put a headset on a Toshiba 2010SD. Which kind, what adapters, any programing?

You will need a HHEU2 headset card to go in the phone. No system programming needed. I use Plantronics M10 or M12 bases and let the customer pick the headset upper.

I also find it handy to program a "Release" key for headset users.

be wary of using some cordless headsets. for some reason the Daughter boards don't get enough power from the base so they never seem to work. I forgo installing the daughter board and go with a handset lifter. Don't know why but they don't work with the cordless plantronics. Others have same problem?

I've always had success with the Plantronics wireless headsets. You may need to adjust the sensitivity settings on it during intial setup, but after that it works flawlessly. Using the HHEU/BHEU is not necessary for headset operation. If you install the HHEU/BHEU you can control onhook/offhook via the headset unit. If you don't have the card installed, you can keep the handset offhook at all times and use the pdn key to answer a call and the release key to hang up and go to idle.
