Have a customer with a STSe with Flash VM. Will this unit do Audiotext (info only) MB's? if so, can the Audiotext Mailbox have single digit options (CCR Tree) within the mailbox for additional options for the caller??

No info mailbox on it but you could use a CCR tree to send it to.

You can send them to an unused greeting ( 04 for example ), and create a special CCR for this greeting. In the CCR you can assign digits to go to other Greetings, ext's, guest mailbox, off-net, ect...If you want it to be a "info only" with no dial actions you would disable all dial commands in the CCR and have it "Time Out "( time out option only available in the latest versions of flash vm's ) back to the main greeting.
