What are the differences between a CPU-1 and a CPU-2. Same with an SRV-1 and SRV-2. Are they interchangeable (cpu-1 and cpu-2; srv-1 and srv-2). Can a cpu-1/srv-2 combination be replaced with a cpu-2/srv-2 combination?

To answer your last question first, yes, you can backup the database and put it on a CPU-2, with the SRV-2.
I forget what the exact differences were with the CPU1 vs. CPU2, and the SRV1 vs. the SRV2. I always used the 2. There was also a memory upgrade, to increase the number of SMDR records in the buffer.

I seem to remember one of the differences being that the CPU1/SRV1 would only allow you to use 1 backplane, where the CPU2 would allow you to go beyond the first backplane. Of course there was licensing involved too.
