I currently have two asterisk boxes using IAX trunking. The sound quality of this link is fair.
Would changing this to SIP trunking improve the sound quality?

It may make a difference. IAX carries the signaling and data as one stream(usually port 4569) whereas, SIP separates the signaling and data into 2 streams(port 5060 and a range of ports for audio). Give it a shot.
