Is there a way to pick up a phone, dial some numbers, and find out what local and/or long distance carrier it uses? For instance, if you dial 00 that should take you to the operator for their long distance carrier, right?
Are there any other ways?
Likewise, can you pick up a phone and find out whether it is using POTS, T1, PRI or SIP trunking?

I think 700-555-4141 will still give you the LD carrier. (area code) 700-4141 used to give you the inter lata carrier, those were both published numbers.
I think Sandman has a location on his site where you can put the area code and nnx to find out what CO a number works out of.
Your last question I have no idea.

If 1-700-555-4141 doesn't work, I just dial 0 to obtain the local/regional carrier or 00 for their inter-LATA one. Sandman's site isn't very specific per NNX since many carriers are now buying them in blocks of 1,000. Some NNXs may be offered by up to ten different service providers. I've found that www.Telcodata.US offers much more detail in their area/exchange lookup, since it goes all the way down to each block of 1,000 numbers.

The TelcoData site shows the original service provider. With number porting, it may not be accurate.
My home and cell numbers have all been ported to new providers, which are not reflected.

Yeah, DND, I knew that it isn't 100% accurate due to number portability, but at least it gives us a 90% chance of being close!
