We recently have changed phone systems to an Inter-Tel PBX system. We have a fax server also in place. Question (and I need links, proof, etc) is can the Inter-Tel switch provide/convert DID signalling to DTMF tones to forward to our fax server for routing of faxes to individual desktops.

Yes you can take a DID circuit and route it to a single line device to go to a fax. I have taken a couple of DIDs routed it to SLA adapters and pumped them back into the system as trunks routing through the call routing table from there go to SLC card to fax or station extensions.
