Sometime around the end of the month or so I'll need to move an X16 to new premises & reinstall.
How long can the system & phones be disconnected before losing memory?
Any tips or warnings?

The phones lose their extension numbers after only a few minutes of disconnection when paired on the same port, but that is easy to set up once the move is complete. The rest of the information resides in the KSU, so you will be fine.
As with any system, I'd do my best to keep the KSU powered during the transition as much as possible.

per the manual:
Set Relocation Extension parameters such as voicemail will remain for up to 120 seconds when an extension is unplugged or being relocated. To relocate an extension simply unplug it and plug it into another extension port.
Note: A “Endpoint Device box†may be needed when relocating an extension.

Bob, I'm moving the whole system to new premises in the next city, so "seconds" isn't worth squat.  What about the memory in the individual extensions, such as the "Phonebook"? When I re-assign the lost ext number, will "Phonebook" stay intact? In other words, Ext 302 has, say, 18 numbers in the Phonebook, when I reconnect & reassign the ext number to that phone, will those numbers remain or should I tell the client to take note of any phonebook entries as well as any speed dial numbers assigned to that extension?

The phone will default. You will lose everything in memory.

Its pretty simple to plug it into a battery backup unit, that should take about 5 seconds. Someone around must have one you could borrow and it uses squat for electricity.
You could even use your 12 volt car outlet to power an adapter to charge the battery backup while you are on the way and if you had to buy a battery backup which is a good idea anyway, they are less than $100 for the small ones and your car would charge that.

OK, I'll tell the users to take note of the phonebook entries so they can redo them. Thanks for the answer I needed.  Have battery backups in stock....kind of impossible to keep KSU & phones hooked up when moving to a new city...

I just discovered that I did not lose voice mail messages, username, extension number, or a test phone book entry after unplugging my demo system KSU overnight.
