I am dealing with several different versions. One business has a Version 9.06 Axxess.
The other one has an Axxent...
Does anyone know what timers to change in each one to change the number of rings before the call goes to VM?

In most cases System Forwarding is used to get calls from the fone to voicemail. If that's the case, the System Forward Initiate timer is the timer that controls how long until a call forwards to voicemail.

If you change the "System Forward Initiate" Timer this will change the ring count for all extensions. If you want to change an individual's extension ring count, you have to build a custom forwarding path. Set the first forwarding point to it's own extension and the second to the voicemail extension. This will double the number of rings before going to vmail.
