This might be a dumb question but each of the sips on my system can make and recive a call at the same, correct? For example say I only have one SIP Trunk and I call out on my phone and someone calls in we could both be using the same SIP?

Nope…. a SIP trunk functions just like a phone line …. one trunk = one call. Having said that some providers will offer "bursting" once you get several trunks so if you have 8 trunks they may let you burst to 9 or 10 … it depends on the provider's offering.
