Is it possible to use one CIX100 with a PRI and some SIP trunks to use different area code prefixes? For example calls going out the PRI would use 812-***-**** and calls using going out the SIP trunks would use 756-***-****.

When you use "use different area codes" you are talking about the outgoing caller ID presented to the carrier? Yes, assuming your system is sending caller ID to the carrier, then each outgoing line group could have a different default caller ID, and different default area code.

I would create a OLG group with the SIP and then assign the extensions to that OLG group. Correct? How to tell what ext to use what OLG?

If the PRI and SIP are built into the system, then they would already have to be in different Outgoing Line Groups. A PRI and SIP can't share the same OLG.
You would have to build an additional LCR group, plus route definition and schedules, and have assign some extensions to the LCR group to use the SIP trunk when they dial 9.
If you don't like using LCR, then I guess you could put pool line keys on different phones depending on if they use the PRI or SIP.
