After much battling, I finally got our former installer to give the inter-tel serial port adapter to connect my phone system to a pc for DB Programming. One question though, on the adapter it says to use an 8P/8C reversing line cord. Is that a straight through cat5 cable, a crossover cable, or a special pinout ?

You can use a straight through cat 5 patch cord.

You can also use a standard 4 wire line cord.
