Im working on a proposal for a new phone system and trying to find out the approximate date of birth of our Cix. Is there a born on date sticker somewhere on the back that I missed?

I am not aware of anything that would have a date on the outside of the cabinet. There really isn't enough information to guess the age of the system.
The original CTX670 came out in 2002, but it is still being sold today. In 2005 is when they started branding the systems as CIX instead of CTX, but you could update the original processors up to version 3.10 and it would technically be a CIX system.
If the software version is 4.0 or higher then best guess is 2006 or newer.If the version is 3.10 or lower then it was probably made before that.

If you take a look at the processor itself, is it a BCTU1A or 2A or BBCU? The BBCU was the first processor for the 670 and was introduced in 2002 like Newtecky stated. The BCTU1A replaced the BBCU a few years later. And the BCTU2A was introduced in 07 I think.
