We have taken over management of a IP6000 system, the previous company who maintained will not give up passwords to access the system, is there any back door into these systems at all? as i do not want to default and start from scratch.

Have the customer request that the password be reset by the previous vendor. If they own the equipment and do not owe the vendor they should reset it for them or report them to Polycom.
