On VM Pro, what is the better option to go with. I have always used the default (Intuity) but it seems to me the voice prompts/help in IP Office mode are simpler. I always use visual voice, but for users with analog stations IP Office mode seems easier to use. Is there anything beneficial in Intuity vs. IP Office mode?

If the users are coming from another Avaya system (Partner, Magix, Definity) the Intuity interface is going to be more familiar. Download the quick reference guides for each mode and compare to determine which would work best for your customers.
