If a call comes to us, either on the main 029207*** number, or any of the DDI numbers, it usually displays the number of the caller . However, if a caller is using “Number withheld”, etc, then instead of showing ‘Unknown Caller’ etc , it shows the number that the external person dialled.. IE: my direct dial is: 02920 7*** If a phone dials me and withholds there number, the number that flashes on my phone is my own direct dial number instead of ‘Unknown’..... Is there an option in the phone system to show ‘Unknown’ ?? Or is it a case of, the phone system shows our number, meaning, the external caller has rang that particular number, and is withheld (so u know if someone is dialling main number or users DDI’s) ?

Some info would be helpful. Which Mitel? POTS or PRI?
The LEC or carrier has control of what comes down the pipe during the caller ID interval. Whatever is presented to the Mitel, that's what the Mitel shows.
