I have a customer with the above listed voice mail with email notification. In the near future they will be changing to a cloud based exchange server utilizing Office 365. On the surface I would think this would not be a problem, but has anyone else tried it under this scenario?

You may have issues with it. My notes on a sl1100/SV8100, Office 365 must have SMTP relay set up. View these two links to Microsoft on how to setup the relay, and allow for multi-device:
https://technet.microsoft.com/en-us/library/dn592151(v=exchg.150).aspx
https://technet.microsoft.com/en-us/library/dn554323(v=exchg.150).aspx When you set up a multifunction device or application to send email through Office 365, there are some cases where the device or application can’t connect directly to Office 365. In these cases, you need to set up Internet Information Services (IIS) to work as an intermediary. Before proceeding, review How to set up a multifunction device or application to send email using Office 365 as there may be an available option that doesn’t require setting up an additional server to relay.
