Hello, Using a regular Axxess serial adapter, how do I direct connect to an Axxent? It has a modem I could dial into  but I'll be on site. Thanks!

You can't. You need a 9 pin male to 9 pin female cable. I dont recall off hand if it's serial or null modem.

Like a straight through serial from the laptop to the Axxent or would I use the Inter-tel 9-pin Axxess adapter to a line cord to another Inter-tel adapter with a gender-bender or null modem?

Use a normal serial cable. I use a DB9F to aDB9M.
