Hi,
We have two trunks on our system which we can access by dialing 9 for trunk 1 and 800 for trunk 2, I cannot for the life of me find where to change the prefix for trunk 2 from 800 to say 8 Anyone know how to do this?

Try MMC 724 but you may affect other features doing this.You will lose any other feature code that starts with 8. If it was me I would make line 1 81 and line 2 82 But that's just me

9 and 800 are trunk groups. Sounds like you have 701 in group 1 (9) and 702 in group 2 (800)
If you do change things in the features section of mmc 724 (numbering plan) 8 isn't a good one to use. Just 8 will conflict with all the 8xx and 8xxx items in the numbering plan and there are a lot of ports that already use those ranges.
Messing with the numbering plan, you really need to know what you are doing to avoid breaking things.
If you have both your trunks in trunk group 9 then, when you press 9 it will grab whichever one is free. Would that work?
