I have a few few Definity parts here, and I would like to build them in to a system to play with. What I have, is a TN795, TN2182C, TN2214CP, TN2401, TN2464, TN2793B, TN771, and TN799DP.

Am I right in assuming that I only need a cabinet, and an analog trunk card to build something functional?

What you have there is just parts. The licensing is not transferable. If you don't have the login and password for the processor you are going to need to relicense the software and purchase the RTU's.

I believe that the processor is new. Would it then have default passwords on it and be useable?

The TN795 processor will work with default passwords without needing to have a pcmcia card installed. But you can't do any adds to the system as well as other major changes. This is where you pay Avaya for RTU and get a pcmcia card to keep track of what you pay for.
