That was the part that stood out to me. If the install company did this without notifying you that this is not a standard practice (or really "best practice" I guess), I would be suspect of their work.

I'm not sure I follow. Maybe I described it incorrectly. When we were in the design phase I told him where I wanted data and phones. For each location he ran two CAT6 lines. So for each location I have a choice of two data/two phones/or one of each. The CAT6 cables come back to my media closet to a patch panel, where half are designated as "data" and the other half as "phone", but I can really use them how ever I want.

BracesGuy. That is the prefered way. They way tht richardmorris was thinking was that it was one cable split couple of pairs for voice and a couple of pairs for data. That is what he was referring to. Your cabling is fine. I would say check out the dealer that put you in previously. If they can support your needs and you have been happy with them. Stick with them. If not references are a good thing. Check any vendor out even if it is a close friend. If you don't it might come back to haunt you.

Right then. The way I read it, it sounded like you had one cable and were splitting the pairs for voice and data. I've seen this done, more than once, and had to break some bad news to a customer.
