A customer wants me to take off her auto attendant during the day and have a day/night button to put back to aa at night. Will this ring more then 1 phone during the day or only the operator phone. I don't think the kx-ta does a hunt group so does initial ringing ring all the ext's

Fresh, you set the ringing on a per extension basis for day and night.

Is there a way to turn off all the prompts of the lady. to leave a message you have to press 1 then 2 then she asks you to hold or dial another ext. etc etc etc. Can aa just answer phone rings goes to mailbox with the greeting.

Yes, you can answer with a custom menu and have the digit translations go to specific mailboxes.
You can also set the "call transfer anytime" in the custom menu to Mbx rather then Ext.
You don't want to turn on "all calls transfer to mailbox" or you will loose the MWL.
Is this a business or a Res.?

Business but right now you have to push a whole bunch of buttons to leave a message AA answers you push 4 to speak to a manager rings manager's phone then the lady comes on saying that person is not available do you want to hold or try another extension or leave a message something like that. then you push 1 to leave a message then this robot lady comes back asking if you want to do something else then you need to press something else to leave a message just too many steps

and the answer is still yes.
There is no need to turn off any prompts, you just need to have it properly set up.
The actual step by step programming would need to be taken off board, either PM, email or phone.
If your going to take over the service and MAC work on this it would be a good idea to get together with a local Pana. tech.

Everything's working ok all i need to do is turn off the to leave a message press 1 to call the operator press 0 the hold press 2. Is that easy to turn off?

Set each phone with a mailbox to forward busy / no answer to voicemail. At the set press intercom, fwd/dnd, 2, (1st viocemail Ext.)then #
Also, in the COS, I would turn off "play system prompt after personal greeting".
