The yellowing is a chemical process.
There are many rumors out there about how to reverse it,but as far as I know, they are all rumors (i.e. - toothpaste, denture whitener, bleach, oxy clean, etc.)

i get my old rotary sets used for ringdown phones painted, if they are just dirty and just need a scrub i put the housings into a bucket of warm water and dish soap and let them soak. I had gotten a load of old 554 sets out of an factory from a friend who had a salvage contract there. The place produced chocolate and instant coffee. Some of them were loaded with a crust of instant coffee from 40 years of coffee production. Soap and warm water in a bath got them all clean

Jeff,
we use the refinglayzit in our shop.
you still need to clean the phone first then use the refinglayzit after to give it a nice glaze shine to it.
A warning although. put to much and the buttons will stick.
As for the yellowing, we replace most of the housings with new ones or have them painted.
