What kind of headsets, wired and wireless, will work with the C class 24 button telephone? Since there is no headset jack, what are my options?

The best thing to do is use one that is designed to interface with the handset. We use the Plantronics CS50 Cordless, or the GN 9330 Cordless (the GN is better sound-wise). I've used both and they work.
On the other hand if you are looking for cheaper solutions, ie. a corded model, we use Sennheiser for their sound quality, and you'd have to use a splitter to come off of the handset. I don't have any experience with using the 24 key phones like this, but if I have a minute I'll throw one together to see if it works.
