Is it possible to use an external gateway with Asterisk? I have a Grandstream GXW4104 FXO gateway that I would like to use with the Asterisk that I am setting up in my "lab".

Yes. You will need to do a sip registration which will make Asterisk connect to the grandstream, and then set-up the appropriate sip entry like you would anything else.
