I've been digging through the manuals, but just can't find this anywhere. Is there a way to pick up a ringing CO line just by lifting the handset?

Yes there is. Under extension settings. It is set to ring by default and as long as the CO lines are buttons on a phone. Either Group CO or Single CO.
