We occasionally run into a situation where someone accidentally hits the All Page button on their phone and broadcasts whatever terrible music or embarrassing conversation they have going on to the entire office. This results in a frantic search to figure out whose phone it is so we can prevent sure disaster.
In other words, is there a way to cancel / override an all-page?

Although I've not tried this, I'm guessing that a #5#36 code to answer an all page would work.
After a bit of search, it seems that you might have to reprogram your paging to fool the system so you can do this (if you're not using a BIOU)
From FYI comes this info:
Solution
1. In program 100 add a BIOU to an available slot. The card does not have to be physically installed. 2. In program 503, Page Zone Relay to Page Group assignment, select Page Zone Relay Number 1 from the drop down menu. 3. Check Page Group 01 and Submit it.
Now when a zone page is generated the system thinks an external page has been made. The Flexible Access Code, Answer for External Group Paging #5#36 will now work.
As I said, I've not tested this - but I'm guessing that this would prove to be the most promising way to fix the problem.

Many years ago I had to drive hours to troubleshoot a store were nobody could page because everyone got a page busy/ Onsite I figured out that one extension was off-hook. I hung up the phone completely (it was an analog SLT that was just slightly off-hook) and cleared the page.
Shortly after that Toshiba added a new feature to disconnect a page after a set amount of time. While it does prevent people making long speeches (like one time when the local major of Phoenix wanted to make an announcement over the store's speaker system) it has prevented this type of issue from happening again.
Most pages are pretty short, like about 10-15 seconds. You could have the system disconnect the page after 20 or so seconds. It may help to present this from going on too long.
