At initial programming, the R7 is asking me to record both a name and a greeting for each mailbox, but when I call in from the outside to listen to the mb greeting, I hear only the recorded name, followed by the factory prompt "......is not available." Is there a way to make only the greeting play, since there does not seem to be a way to bypass recording the name on each mb? Thanks!

No, you must record the spoken name on the initial login to the mailbox. Once you do that, and set a password, press 3 for Name/Greeting, 1 for Greetings, 1 for Greeting Number 1, and 1 again to record Greeting Number 1. Wait for the tone, speak, press 1 at the end, *# to approve, and finally 0 to activate the new greeting.
