I cannot seem to find in the R7 manager's guide how to copy the day AA greeting to night, so that my customer only has to record one greeting. Any help would be appreciated. Thanks!

You can't..they just need to record both...or use day mode all the time.

Well, you sorta can. Use the programming GUI that connects through the LAN port, go to the Day menu, play the greeting, click on the "Save As" icon, save it, then go to the Night Menu, play the greeting, and use the "Open" icon to load the saved Day Greeting, then OK it to save back to the Partner Messaging.
