I have a chance to pick up a 3501 to use as a replacement for our church's 3500 BKSU that has been having problems lately. Are they interchangeable? Can I upload our current 3500 database to the 3501?

You should be able to. The 3501 has an upgradable PMU for future software releases. Just before the STS was discontinued Vodavi released a third feature pack for the system. FP2 came with the 3501 which was an STSe. The 3501-01 had Gold software which allowed use of the 3015 30 button sets.
