Hi - newbie here!
Can I use a tone generator at a jack and use the probe to trace where the wire connected to the jack has a break? Or is it not possible because there is no continuity in the line anymore?

Toner/ Probe is not the best way to find an open wire since the tone can "Ride Over" the open. If you don't have any test equipment such as a Dynatel, Progressive, and ETC, or if you don't know how to measure an open with an ohm meter, the Toner/Probe may be the only way.

Testum makes a tone/probe, wire verifier, and even figures distance on each wire.
The distance part will tell you cut or open wires by the differnce in the lengths.

I use FLUKE 620 Handheld tester to test Cat.5 cables for wiremap, length & cat.5 specs. It checks for miswires, open & shorts. We also use it to test phone wires to check wiremap, length, miswires & shorts. By comparing the different lengths (eg. wires 3,4,5,& 6) in meters or feet I can detect which wire is broken & at what distance from my meter. It's a great tool for troubleshooting cable problems fast. FLUKE 620 is more costly than Tone Tracer but it gets the job done fast. ------------------ https://www.cablemaster.com.sg

Check out Ebay, there are a ton of testers for about $1.99. we have four of them, they work just fine for this type of testing. Of course for a true test we have an Agilent Wirescope 350.

If you're not doing this kind of work, the best & cheapest thing to do is replace the wire. If we have a wire that is broken and the problem is not at the jack or at the MDF, we replace the wire. You then do not have to worry about future problems.
